50 S I P N O R T H W E S T C O M making of beer New equipment and hop varieties off er just a snapshot of the advancement that exists in any deep rooted tradition Yet a few standout producers in the modern age are decidedly more old world than others convinced that the approaches of their distant predecessors yielded something special in the glass Age Old Methods BLOCK 15 BREWING shares the fertile and hop heavy Willamette Valley with Benedictine situated a bit farther south in the agricultural university town of Corvallis Although the label does not use a formally spiritual approach it holds fast to the methods of ageold European brewers Specifi cally Block 15 mimics the Lambic styles developed by the Belgians long ago Lambic started in the Flemish region of Pajottenland southwest of Brussels some 500 years ago The wild fermented barrel aged beers gained popularity around the turn of the 20th century when brewers dialed in their bottle conditioning techniques and as a result fewer and fewer bottles exploded From our resident flora we are able to offer beer that is rooted in tradition with a profile that is unique to our brewery says Nick Arzner of Block 15 Block 15 Brewing
